Uncooked take-out to offer the real raw deal in West Loop

Quick! That comes to mind when you hear the words “fast food?” If you’re like most of us, those words conjure images of burgers, fries, breaded chicken and other items laden with the fat and salt that make everything so tasty, but not necessarily the best choices for a steady diet.

A new restaurant coming to the West Loop plans to change the way we think of fast food.

Uncooked plans to join hip tenants such as Google at 210 N. Carpenter St. in May. The food will be raw, vegan, and ready to grab and go, which is a good thing as the 1,130-square-foot eatery will not have seating -- perfect in this time of social distancing and bans on dining in. The take-out restaurant is owned and operated by Jeremy Jones, his wife, Kaitlyn and his mother, Carole.

Carole Jones is the founder of Chicago Raw, a vegan restaurant and health food store on North Clinton Street that has won 4.5 stars on Yelp.

“We want to unlock full potential of a plant-based lifestyle, taking delicious food a step further and fully unlocking the capability of a conscious business and marry that with a conscious restaurant,” Jeremy Jones was quoted in Eater Chicago earlier this month. 

In addition to eschewing animal products, Uncooked’s cuisine will be free of soy, gluten, peanuts (ask about tree nuts) and processed sugar. Jones said that all Uncooked’s take-out items will be packaged in eco-friendly, compostable containers.

The healthiest food, though, doesn’t do a body good unless someone eats it, and the point of Uncooked is to make healthy, vegan, zero-waste, planet-friendly food not only easy to obtain but also delicious.

The menu will include such family vegan favorites as cacio e pepe made with kelp noodles, cashew-almond-cheese-stuffed watermelon ravioli, and sugar-free desserts.

Customers will be able to order online and by phone as well as at the shop.
